Now that spring is almost here, I’ve been working to lighten up my family’s diet and serve healthier meals. My kids love Japanese Food and teriyaki sauce, so I decided to make teriyaki salmon with broccoli one night for dinner. The fun part of the meal is that I served our dinner with chopsticks, which both my kids and I are hoping to get better at using!
It turns out that broccoli was highlighted as the superfood of the month for January and February in online magazine, Healthy Living Made Simple. (Healthy Living Made Simple, a bimonthly online magazine, helps to point the way to healthy lifestyle decisions for Sam’s Club members.) Salmon is highlighted as the superfood of the month for March and April. The magazine has lots of helpful articles on topics like nutrition, fitness and time management, too!
While I was at Sam’s Club, I stopped by the pharmacy area for a free health screening. I was a little nervous about the screening, since I have been running myself ragged recently, but my blood pressure, cholesterol and other vitals were great! I was especially glad to find out that my cholesterol levels were good, because my cholesterol was a little high a few months ago, so I have been trying to watch that! But I know I have to watch my body fat percentage — that has definitely climbed over the winter months, so I have to start doing some fun spring walks with the kids!
The free health screenings are held on Saturdays at my local Sam’s Club — be sure to check out when the free health screenings are held at your local Sam’s Club! While in the pharmacy area at my Sam’s Club I also checked out all the great health and wellness items that I can get for my family there.
Teriyaki Salmon and Broccoli
I figure my teriyaki and salmon recipe would be a great meal for both the Easter and Lent Season. I shopped for the ingredients for my dish at Sam’s Club, which gave me so many ideas for our holiday meals. Sam’s Club has lots of fresh produce, and fresh and frozen meats and fish.
Ingredients
- 1 cup white rice
- 1 tablespoon cornstarch
- 1/4 cup reduced sodium soy sauce
- 1/4 cup brown sugar, packed
- 3 cloves garlic, minced
- 1 tablespoon freshly grated ginger
- 2 tablespoons honey
- 4 salmon fillets
- 12 ounces broccoli florets, about 2-3 cups
- Whisk cornstarch and 1/4 cup water together in a small bowl.
- Add soy sauce, brown sugar, garlic, ginger, honey and 1 cup water to a small saucepan. Bring to a simmer over medium heat. Stir in cornstarch and water. Let thicken for about 2. minutes, and then let cool to room temperature.
- Preheat oven to 400 degrees F. Coat an 8×8 baking dish with cooking spray.
- Place salmon into the baking dish and coat the salmon with the soy sauce mixture. Bake the salmon until it flakes easily with a fork, about 14-15 minutes.
- Steam your broccoli florets in a steamer or colander set over a pan of boiling water. Cover and steam for 5 minutes.
- Serve the salmon and the broccoli.
I served my teriyaki dish over rice, which is really simple to make in my family’s rice maker. We use our ricer maker several days a week! All I do to make the rice is pour in the number of cups of rice I want to make, fill up the rice maker with water (the measurements are marked inside the rice maker), close the lid, and hit a button to start cooking! When the rice is done, my rice maker will make a loud beep. Easy!
When I go back to my Sam’s Club, I’ll be stocking up on more fresh fish for my family, since I can purchase it in bulk at a savings. I can get the fish right in my Sam’s Club’s fresh fish/seafood aisle.
I will also pick up more broccoli in the fresh produce aisle, since my family loved the broccoli!
I really like this dish, and am happy that I found a new and simple way to serve more healthy salmon for my family!

- If you like, serve the salmon and broccoli over rice. I like to make my rice in a rice cooker.

I’m glad your health screen was good! Yay! I always worry a little too, which doesn’t help with the bp reading! lol! This looks really good. I have only had salmon a couple times in my entire life, but I like that you have a teriyaki sauce on it. I bet I would love it!
