I am hoping to make more meatless meals for my family this year. We’re aiming to be better about what we eat. This year we made a “Vegolution,” or a pledge to add more healthy vegetables into our routine!
I discovered MorningStar Farms® meatless products in the freezer section of my local Walmart. I thought they’d help us with our resolution to eat healthier.

Chipotle & Black Bean Taco Bowls
I used the MorningStar Farms Chipotle Black Bean Crumbles in easy but delicious taco bowls that I served for dinner one night.
The black bean crumbles are a delicious combination of soy, black beans and chipotle peppers.
In the bowls I also used vegetarian MorningStar Farms® Meal Starters® Chik’n Strips and Great Value™ Hong Kong Blend Frozen Vegetables.
The Chik’n Strips are a soy veggie cuisine, and one of my daughters especially loves them.
What I like about the Black Bean Crumbles, Chik’n Strips and Great Value Hong Kong Blend Frozen Vegetables is that I can prepare them all quickly in the microwave. So quick and easy!
I found the Chipotle Black Bean Crumbles and the Meal Starters Chik’n Strips in the frozen food section of my local Walmart.
The vegetables are a good mix of broccoli, carrots, onions and mushrooms.
The veggies were easy to find in the frozen vegetable aisle at Walmart.
My family really enjoyed the taco bowls. I was happy to have found a vegetarian meal that everyone enjoys. They especially liked the taco bowls that I created by baking simple corn tortillas. (She the how-to instructions for the bowls below.) The bowls are so much fun!
Ingredients (Serves 4-6)
1 bag Chipotle Black Bean Crumbles
1 bag Meal Starters Chiik’n Strips
1 can corn (I mixed in some fresh cilantro and salt and pepper to taste)
1 bag Great Value Hong Kong Blend Frozen Vegetables
2-3 cups shredded pepper jack, cheddar or Mexican-style cheese
3-4 cups cooked rice (I used white rice)
8 soft Corn tortillas
A few tablespoons chipotle dressing
A few dollops of sour cream or salsa (optional)

Directions
I created taco bowls by baking soft corn tortillas. I lightly sprayed some corn tortillas with cooking spray and made them into bowl-like shapes by pressing them in small stainless-steel bowls. (I used stainless steel rice bowls, but small mixing bowls or other oven-safe bowls would work, too.) I cooked the corn tortillas for about 8 minutes at 350 degrees until crispy.
I prepared 3-4 cups of rice in a rice cooker, but you can also use boxed rice and cook the rice according to the box’s directions.
I prepared the MorningStar Farms Chipotle Black Bean Crumbles, MorningStar Farms Meal Starters Chik’n Strips and Great Value Hong Kong Blend Frozen Vegetables by heating them in the microwave according to the packages’ directions.
I made a simple corn salad by mixing drained canned corn with fresh cilantro, and adding salt and pepper to taste. I heated the salad until hot (about a 1-2 minutes) in the microwave.
Once everything was prepared, I put the cheese, rice MorningStar Farms Chipotle Black Bean Crumbles, MorningStar Farms Meal Starters Chik’n Strips and Great Value Hong Kong Blend Frozen Vegetables in bowls so my family could assemble their own tacos. I also put out containers of sour cream, salsa and chipotle dressing on the table. Each family member filled their own taco bowl with the ingredients to make a taco exactly to his or her own liking.
I love that this meal is super easy to make, but healthier, too! Plus, my family really liked it!

These veggie bowls sound really good, I am going to have to try them and pick up some of these products when I hit Walmart next. I love trying to go ‘meatless’ once or twice a week for dinner!
