During the school week, one of the simplest and quickest meals that I love to make is easy weeknight chili. The recipe is so simple to make that it’s almost not even a recipe. But this recipe sure does make a good bowl of chili!
Easy Weeknight Chili Recipe
Ingredients (serves 4)
To make this super easy chili, all you need is a handful of ingredients:
Chili
1 lb ground beef
1 15 oz. can kidney beans
1 16 oz. jar salsa (I either use mild or medium)
1 packet taco seasonings
1 tablespoon garlic powder
1 tablespoon dried oregano leaves
1 small onion, chopped
Toppings:
Dollop of sour cream
Chopped cilantro, to taste
Raw chopped red onion, to taste
Shredded cheddar cheese, to taste
Chopped avocado, to taste (I didn’t have this on hand the last time I made this recipe, but adding avocado to this dish is an extra treat!)
To make my easy weeknight chili for my family of four, I first brown 1 pound of ground beef in a skillet. After the beef is browned, I add the chopped onion, the contents of 1 jar of salsa, 1 tablespoon each of garlic powder and dried oregano, and one taco seasonings packet, and stir. I then stir in the contents of one can of kidney beans. I continue to cook the chili 5 minutes or so to make sure the beans are heated through. And that’s it!
Then it’s time to plate the chili.I think the toppings are what make this dish! For my plate of chili, I like to add a healthy dollop of sour cream, plenty of chopped cilantro and a small handful of chopped red onion. Delicious!
