I am hoping to host a family party in a few weeks, and as I am not the best of cooks, I’ve been on the search for tasty (but easy) recipes that I can serve.
I’ve had a lot of luck with Pinterest, and think that through the online site, I’ve found a few recipes that might work for my next shindig.
South of the Border Fare
I found a great recipe for a cheesy enchilada casserole. The casserole looks easy enough for even me to pull off and it looks like something I could possibly freeze later if there is some casserole left after the guests have moved on from the entrees to the desserts.
Posted by the Just Get Off Your Butt and Bake blog, the dish includes ground beef, beans, corn, soft tortillas, cheese and taco seasonings. What’s not to love?! The casserole should feed eight people, according to Get Off Your Butt and Bake, so I might make two of these.

I was thinking of also making a Cobb salad (with chicken, bacon, avocado, greens and cheese), so I can add some veggies to the menu and because Cobb salads is pretty much a universal favorite.

For the kids, hot dogs wrapped in crescent rolls might be a good option – there many even be some adults who like those!

Recipe Girl has a great Oreo and Cream cupcake and icing recipe that I’d like to try, since the family celebration I am hosting will be a birthday party.

In all, it sounds like a good menu to me – I might just add a simple pasta salad, as one of my daughters doesn’t like hot dogs, bacon or spicy food, so I want to make sure there’s at least one dish she can eat!

That sounds awesome! I love that it’s in a slow cooker, too! I need slow cooker ideas, especially since putting the boys in school. I hate spending the time between when they get home from school and dinner working in the kitchen instead of reading and snuggling with them 🙂

I agree that preparing dinner before the kids get home is much better than cooking when you could be spending precious time with them!
