Ingredients

1/2 pound fresh strawberries, stems removed

1 1/2 cups granulated sugar

4 1/2-5 cups water, divided

1 1/2 cups fresh-squeezed lemon juice

Instructions

Blend the strawberries in a blender or food processor until smooth. If desired, strain the puree through a fine-mesh sieve to remove the seeds.

Meanwhile, combine the sugar and 2 cups of water in a small saucepan over medium heat. Bring the combination to a boil, stirring it until the sugar dissolves. Remove the pan from the heat and let the simple syrup cool to room temperature.

Strain the lemon juice into a 2-quart pitcher. Add the cooled simple syrup and strawberry puree, then stir well. Add the additional cups of water. (Add extra water to dilute the sweetness, less to make the drink sweeter.) Refrigerate until chilled.

Serve over ice.

Enjoy!
