Today we are featuring potluck recipes! I am sharing an easy and delicious potluck recipe for shrimp burritos! Scroll down below to see all the delicious potluck recipes being shared today! Also check out our 12 Days of Holiday Ideas GIVEAWAY below!
Shrimp Burrito Recipe
Serves 4 (dinner) or 8 if serving as appetizers
Ingredients
2-3 tablespoons olive oil
1 avocado
1 bunch cilantro
I jar cilantro avocado dressing
1 jar chipotle ranch dressing
40 large shrimp
3 cups white rice
1 orange or red pepper
2-3 teaspoons minced garlic
Salt and pepper to taste
4 large soft flower tortillas
Shredded cheese (cheddar or Mexican blend) – optional. I like to use Pepper Jack Cheese or Monterey Jack Cheese by Cabot.
Cut pepper into thin strips.
Cut avocado into small cubes.
Cook about 3 cups of white rice (I used our rice maker). Or, if you prefer, you can use seasoned rice.
Sauté shrimp in olive oil with the minced garlic. Add salt and pepper to taste.
Place stack of tortillas on a plate in microwave oven. Place a damp paper towel on tortillas. Microwave for 30-40 seconds.
Now all you need to do is to fill and roll the burritos! My daughter rolled most of my burritos for me — she’s an expert! I (I finally got it down after watching her do a few.) She learned how to roll them by watching our burritos being rolled at a Mexican restaurant my family likes. (Check out this video tutorial on how to roll a burrito.)
You can top the burritos with cilantro, cilantro avocado salad dressing and chipotle salad dressing. (I buy these dressings bottled at my local supermarket.)
It is best to prepare this dish right before going to a potluck party. If you like, you could bring the assembled burritos to a party in a casserole dish, top them with some shredded cheese, and pop them in the oven (covered with foil) for a few minutes until warm.
