My husband and I have been eating more healthy foods lately and have been having more chicken and vegetables for dinner. I’ve been looking for different ways to serve chicken. I have discovered the Filipino Grill Spice Rub, which features citrus and a little bit of heat, and thought it would be perfect for a weeknight chicken sandwich. This meal is quick and easy to pull together on a weeknight and tastes great!
The Filipino Grill Spice Rub I used is from the Serious Foodie Collection of sauces and spice rubs, which makes it easy for home cooks like me to easily bring in a variety of tastes from cuisines from around the world into their cooking.
Serious Foodie has provided me with a few of their rubs and sauces.
I am looking forward to using the sauces and rubs in the next few weeks to jazz up meals for my husband and me!
Sweet & Spicy Grilled Chicken Sandwich
Ingredients
(Serves 2)
1 lb. chicken breast tenders
I large loaf Italian bread (fresh, unsliced)
2 tablespoons olive oil
1 large cucumber
1 cup fresh cilantro
1 cup micro greens
1 large tomato, sliced
1 cup carrots, julienne sliced
4 tablespoons Serious Foodie Filipino Grill Spice Rub
2 tablespoons red pepper flakes
2 tablespoons melted butter
2 teaspoons garlic powder
Salt, to taste
Pepper, to taste
Instructions
Lightly coat a skillet with the olive oil and heat the pan over medium heat.
Add the chicken breast tenders and coat the tops of the chicken with half of the Serious Foodie Filipino Grill Rub and red pepper flakes.
Cook the chicken until lightly browned on one side.
Flip the chicken and coat the other side with the rest of the rub and the red pepper flakes.
Heat the chicken until cooked through or until its internal temperature is at 165 degrees F. Remove the pan from heat.
Slice the bread down the middle, creating two halves. Cut each side in half.
Melt the butter in a bowl in the microwave. (Heat the butter on high for a few seconds at a time until it’s melted.) Stir in the garlic powder. Spread the butter on the insides of each piece of bread.
Between two slices of the bread, add the chicken, sliced tomatoes, some micro greens, julienned carrots and some cilantro.
Serve the sandwiches and enjoy!
