This month’s blog hop snuck up on me this month — I started a new full-time job two weeks ago! I have been loving my new job—it keeps me quite busy and my co-workers are great. But, I didn’t find any time to create a new apple recipe.
So I picked out an apple crisp recipe that I have shared before and love. This dish is made in the microwave and is perfect as a quick morning meal, or as a simple and delicious dessert. Thanks to Dessert Now Dinner, the creator of this recipe.
Easy Microwave Apple Crisp
Ingredients
1 large granny smith apple
2 Tbsp brown sugar, divided
2 Tbsp quick oats, divided
1½ Tbsp flour, divided
1 tsp cinnamon, divided
1 tsp lemon juice
1 Tbsp butter
Instructions
Peel and thinly slice apple. Toss the apple slices with 1 Tbsp brown sugar, ½ Tbsp quick oats, ½ Tbsp flour, 1/2 tsp cinnamon and 1 tsp lemon juice. Place in a microwaveable dish.
Use a fork to mix the remaining ingredients with butter for the crumb topping. (1 Tbsp brown sugar, 1½ Tbsp quick oats, 1 Tbsp flour, 1/2 tsp cinnamon, with 1 Tbsp of butter.) Sprinkle the topping over the apples.
Microwave the apple mixture for 60 to 90 seconds until the apples are soft.
Dessert toppings: This dish also tastes great topped with whipped cream or vanilla bean ice cream.

I NEED this single-serving apple crisp recipe! What a fabulous idea. I’m the only one who really loves apple crisp in my family, so I eat way too much when I make a full, family-sized batch! This is the perfect solution.
