Sheet Pan Roasted Asparagus & Shrimp Dinner

Happy Monday! Welcome to the Taste Creations monthly recipe link up! The first Monday of every month my blogging friends and I get together to share recipes along a certain theme. Now that spring is here, we are basing our recipes on fresh spring asparagus!

When the weather warms up, my family and I like to spend more time outside. So I’m always looking for quick and healthy meals to make for my family. My sheet pan roasted asparagus and shrimp sheet pan dinner fits the bill! I cook the meal on a foil-lined sheet pan, so there’s little cleanup required. In all, the meal only takes about 15 minutes to prepare! That’s pretty awesome!

Ingredients

roasted asparagus cooked with lemon and garlic

Asparagus
  • 1 pound thin/medium asparagus, ends trimmed
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1-2 teaspoons red pepper flakes
  • 1-2 tablespoons butter, sliced
Shrimp
  • 1 pound large uncooked peeled shrimp deveined and tails removed
  • 2 tablespoons olive oil
  • 3-4 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1-2 teaspoons red pepper flakes
  • 1 1/2 tablespoons lemon juice or more to taste
  • 3 tablespoons butter, sliced

Serve with rice, quinoa or pasta.

Instructions

Preheat oven to 400 degrees F. Wash asparagus and trim off the tough ends. Place the asparagus in a bowl and toss with olive oil, garlic salt, pepper and red pepper flakes until evenly coated.

Cover a sheet pan with aluminum foil. Spread the asparagus on the sheet pan in a single layer and place the pan in the oven. Top the asparagus with the slices of butter. Roast the asparagus for about 4 minutes. Remove pan from oven.

Toss the shrimp with the olive oil, garlic, salt, pepper and red pepper flakes. Spread in an even layer on the sheet pan with the pre-roasted asparagus. Top with slices of butter. Roast the shrimp and the asparagus together for 6 minutes or until the shrimp is opaque and cooked through. Squeeze some fresh lemon juice on the shrimp and roasted asparagus and serve. This dish tastes great served with quinoa, rice or pasta.
