With Mother’s Day coming up, my blogging friends and I are getting together to share some recipe ideas to help you with your Mother’s Day planning! I am a big fan, so I am sharing my quick and easy-to-prepare waffle recipe! They are delicious with fresh berries and maple syrup!
I have always loved waffles and used to make them for my family all the time when my kids were little—I used to make one waffle at a time on a workable, but small waffle maker that I got as a sweet engagement gift just before I got married…29 years ago!
So about two years ago or so, I decided to upgrade to a bigger waffle maker—I got a really nice Krups waffle maker that can make four waffles at a time, so I can make breakfast a lot quicker!
It is also really convenient because it has a timer to let me know the waffles are ready, and I can set it for different browning levels, too. My original waffle maker didn’t have those features. So with my waffle maker, and my quick and simple waffle recipe, serving up a waffle breakfast is really easy.
Easy Waffle Recipel (Recipe from AllRecipes.com)
Makes 8 waffles
- 2 cups all-purpose flour
- 1 teaspoon salt
- 4 teaspoons baking powder
- 2 tablespoons white sugar
- 2 eggs
- 1 ½ cups warm milk
- ? cup butter, melted
- 1 teaspoon vanilla extract
Toppings (optional): Maple syrup and fresh berries
Directions
In a large bowl, mix together flour, salt, baking powder and sugar; set aside. Preheat waffle iron to desired temperature.
In a separate bowl, beat the eggs. Stir in the milk, butter and vanilla.
Pour the milk mixture into the flour mixture; beat until blended.
Ladle the batter into a preheated waffle iron.
Cook the waffles until golden and crisp.
Serve immediately and enjoy!

Ohh, that waffle maker is NICE. I didn’t realize you had one that made 4 waffles at once. I am tempted to get that eventually, because it is such a pain to make so many waffles one by one! I love waffles and haven’t made them in awhile.
