Manual Juice/Fruit Squeezer
I was inspired to make a glazed lemon shortbread cookie after I received my new useful Lightweight Stainless Steel Manual Fruit Juicer/Lemon Squeezer by BH Innovations. My new manual fruit juicer/lemon juicer is so handy and easy to use!
My lemon shortbread cookies require fresh lemon juice. To juice a lemon with my new juicer, all I had to do was cut a lemon and half, place the lemon in the manual juicer and squeeze.
The juicer has its own strainer to strain out the pits. All I then needed to do is pour the lemon juice out of the juicer from its no drip, v-shaped nozzle. (Check out the video at the end of this post to see how easy and fun it is to use this juicer.)
The juicer is really well constructed and is made out of stainless steel. (I don’t have to even worry about myself wrecking it – I have the midas touch, lol.)
I’ve never had a good juicer before. I am looking forward to using my juicer in new recipes – I plan to make fresh orange juice Christmas morning! The receptacle in this juicer can work with a variety of fruits – grapefruit, water melon, etc.

Glazed Lemon Juice Shortbread Cookies Recipe
(Makes 12-14 Large Cookies)
For the cookies:
2 cups all-purpose flour
3/4 teaspoon salt
2 sticks softened unsalted butter
1/2 cup confectioners’ sugar
1 teaspoon pure vanilla extract
2 tbsps fresh lemon juice
For the lemon glaze:
1 cup powdered sugar
1 1/2 tbsps fresh lemon juice
1/2 tbsp water
1/2 tbsp fresh lemon zest to sprinkle over cookies or mix in lemon glaze.
(If you find the lemon glaze to be too thick or too thin, add extra water or powdered sugar as needed.)

Lightweight Stainless Steel Manual Fruit Juicer/Lemon Squeezer

Parchment Paper or Silicone Baking Mats
Lemon Shortbread Cookies Directions
Line 2 rimmed baking sheets with silicone baking mats or parchment paper.
Whisk the flour and the salt together.
In the bowl of a stand mixer fitted with a paddle attachment, beat the butter until fluffy, about 3 to 5 minutes.
Add sugar. Continue to beat the butter for about 2 minutes more.
Mix in vanilla. Add flour mixture. Mix on a low speed until the flour and butter are well mixed together.
Roll the dough into two long rolls of dough. Wrap each in plastic. Refrigerate the dough until firm, at least 1 hour.
Preheat the oven to 325 degrees. Roll out 1 roll of dough to about 1/4-inch thickness. If you would like to make cut-out cookies, cut out shapes using cookie cutters. Carefully transfer the cut out shapes to the baking sheets.
To make round cookies, skip rolling out the dough. Cut slices of cookies from the rolls of dough. Place the rounds on a cookie sheet.
Bake until the cookies are firm and lightly browned, approximately 13 to 15 minutes. Let the cookies cool on a wire baking rack.
To Make the Lemon Glaze:
Mix the powdered sugar with lemon juice and water until your icing is the desired consistency. If you wish, add some of the lemon zest to the glaze. (Otherwise, you can sprinkle the lemon zest on after you glaze the cookies.)
You can spread the glaze on your cookies with a knife – I just poured some on with a squeeze squirt bottle and used the bottle to squeeze the glaze on.
