My family and I traveled to Annapolis, Md., last month. While we were there, we discovered Eastport Kitchen, which was near our AirBNB rental in Eastport. My teens and I ordered the Daisy Sandwich, which has roasted beets, hardboiled egg, arugula, pickled onion, avocado, and an herbed cheese spread on toasted multigrain bread. We like the sandwich so much that we ordered it twice! Once we got home I decided to make my own version of it. I think I’ve come pretty close. We love this delicious sandwich!
The sandwich contains no meat and has fresh vegetables, so it fits with the semi vegetarian diet we’ve been striving for lately.

I am sharing the recipe for this delicious roasted beet, herbed cheese & avocado sandwich as part of the monthly Taste Creations blog hop. The focus of this month’s blog hop is “farmer’s market,” so we will all be sharing recipes featuring fresh fruits and vegetables.
I love visiting farmer’s markets. For example, during our stay in Maryland, we visited farmer’s market, Emily’s Produce.
I enjoyed browsing all the delicious food there and looking at the sunflowers.
Fresh Roasted Beet, Herbed Cheese Sandwich on Sourdough Bread
For this sandwich, I did something I’ve never done before — roast beets. I discovered however, that roasting beets is much like roasting potatoes and is quite easy. For this sandwich, I roasted golden beets. I think these beets tasted about the same as regular beets. The yellow color of the beets was so pretty!
Ingredients
Beets (1 beet per sandwich should be plenty)
1 container herbed cheese (the soft spreadable kind that comes in a plastic container, like Boursin, Rondele or Alouette.)
Salad Greens
A handful of basil leaves – torn into small pieces
Hardboiled Egg, sliced (1 per sandwich)
Pickled Red Onion (I used one small onion for 4 sandwiches)
1 Avocado, sliced
Fresh Sour Dough Bread – sliced (I purchased mine)
Instructions
Boil 1 egg per sandwich. Once the eggs are cooled and peeled, cut into slices. Store in refrigerator.
Wash beets. Cut off the leafy tops. Wrap the beets in foil and bake in an oven at 400 degrees Fahrenheit for 50-60 minutes. Once the beets are soft and baked, slice the beets into thin slices and set aside.
Next, prepare your pickled red onions.
Quick Pickled Red Onions
Pickled Onion Ingredients
1 small red onion, peeled and thinly sliced
3/4 cup vinegar (I used regular distilled vinegar)
1/4 cup water
1 teaspoon salt
1–2 tablespoons sweetener (such as maple syrup, honey, sugar, etc. I used sugar.)
While the beets are baking, pickle some onions. Cut a small onion into thin slices/rings. Pour the vinegar, sugar and salt into the container you will be placing the onions in. (A small bowl or jar will do.) Stir to mix.
Placed the sliced onions into a sieve in the sink. Heat the water to boiling in a microwave. Pour the water over the onions. Drain. Add the onions to the jar or bowl that has the vinegar, sugar and salt and stir. Let the onions sit in the refrigerator for at least 30 minutes.
Wash and drain the lettuce greens and set aside.
Use two slices of sourdough bread per sandwich.
Spread a fair amount of herbed cheese spread on each slice of bread.
Top one slice of bread with sliced beets, avocado slices, egg, pickled onions, basil and lettuce greens. Top with a second slice of bread. Cut the sandwich in half.
Repeat for each sandwich, and serve. Enjoy!

Wash and drain your lettuce greens and basil and set aside. Tear the basil into small pieces.
Peel and slice a ripe avocado.
Use two slices of sourdough bread per sandwich.
Spread a fair amount of herbed cheese spread on each slice of bread.
Top one slice of bread with sliced beets, avocado and egg, pickled onions, basil and lettuce greens. Top with a second slice of bread. Cut the sandwich in half.
Repeat for each sandwich, and serve. Enjoy!

Ha!! I read the title recipe as roasted beef. I looked at the photo and couldn’t find the beef. Read it again. Yup, roast beef. Looked at the photo again. Then read through the post to where you mentioned this was a fresh veggie sammie. Ahhh, roasted BEETS. Now I get it. Have only had beets in Panamanian potato salad.
Love the looks and sound of this delicious pink strawberry cheesecake. Mmmm, that is probably more my speed!!
