Roasted Beet, Herbed Cheese & Avocado Sandwich

My family and I traveled to Annapolis, Md., last month. While we were there, we discovered Eastport Kitchen, which was near our AirBNB rental in Eastport. My teens and I ordered the Daisy Sandwich, which has roasted beets, hardboiled egg, arugula, pickled onion, avocado, and an herbed cheese spread on toasted multigrain bread. We like the sandwich so much that we ordered it twice! Once we got home I decided to make my own version of it. I think I've come pretty close. We love this delicious sandwich!
